Premetto, questa è un’idea di Orso.
Base:
200 gr di biscotti secchi, tipo biscotti da tè, quelli che in Francia si chiamano PetitLu e non lo dico per essere snob, ma perché sono gli unici che conosca-
150 gr burro
50gr ciocccolato fondente
Crema:
250gr mascarpone
250 gr ricotta
125 gr lamponi surgelati
100gr zucchero
3 uova
vaniglia, un pizzico
Sbriciolare i biscotti. Questo è divertente. Orso, dopo aver avuto la brillante idea di svendere il mio blog per un paio di contatti in più, mi ha proposto la soluzione seguente per sbriciolare biscotti senza sporcare. Un piccolo sacchetto (nuovo!) della spazzatura. Si mettono i biscotti, si schiaccia… ecco fatto!
Tritare il cioccolato in pezzi non troppo piccoli, se no rischiano di sciogliersi col burro. Fondere il burro e mescolarlo alle briciole di biscotto e cioccolato.
Ricoprire la tortiera (22 cm) di burro e versare il composto biscottoso. Far aderire ai bordi ed al fondo schiacciando con un cucchiaio.
Mettere in frigo per almeno un’ora.
Mescolare le uova con lo zucchero, aggiungere il mascarpone e la ricotta, aggiungere la vaniglia (sottoforma di zucchero vanigliato o baccello). Usare una frusta per amalgamare.
Aggiungere i lamponi, anche surgelati, al composto e mescolare solo un poco.
Togliere la tortiera dal frigo e riscaldare il forno a 180°. Versare la crema ai lamponi sulla base biscottosa e infornare per mezz’ora. Lasciare riposare.
Se San Valentino è una scusa per mangiare una torta intera, fatta in casa, allora va bene.
Aneddoto di San Valentino: ho scritto un articolo a tema sulle iniziative di prevenzione delle malattie sessualmente trasmissibili intitolato: “Regali di San Valentino non voluti” che cominciava con la frase: “e se il tuo Valentino si desse più di un cioccolatino?” per continuare parlando di iniziative di screening della clamidia. Sia la frase che l’introduzione sono stati miseramente cassati, forse a ragione.

Biscuit
200gr tea butter biscuits, such as the French PetitLu, not because I want to be pretentious but they are the only ones I know.
100gr butter
50gr dark chocolate
Cream
250gr mascarpone
250gr ricotta
125gr raspberries (frozen if you have no choice, I hadn’t)
100gr sugar
3 eggs
vanilla, a pinch
Crash the biscuits with your hands: this is funny. Bear, after deciding that I should sell my blog to consumerism for a few more hits, proposed that I put the biscuits in a plastic bag, the one for the garbage, and then squeeze it. It worked.
Chop the chocolate in not too small bits, or it will all melt with the butter. Malt the butter, mix it with the biscuits and chocolate in a bowl.
Cover the cake pan with butter and put the biscuits mixture in it, so to cover the floor and the borders. Press with a spoon to make the biscuit base homogeneous and store in the fridge for at least an hour.
Prepare the cream mixing eggs and sugar. Then add mascarpone, ricotta and vanilla. Mix until the cream is smooth. Add the raspberries to the cream and take the biscuit out of the fridge. Pour the cream on to the biscuit and cook at 180° for 30 minutes. Let it cool down.
Valentine’s trivia: I worte an article about sexual trasmitted infections’ prevention with the title”Unwanted Valentine’s gifts” with the intro: “what if your Valentine is giving you more than chocolate?” and them went on talking about Chlamydia screening. Both the title and the intro were axed, probably very reasonably.
